POTATO GNOCCHI WITH PEAS, PARMESAN & BROWN BUTTER

A simple, elegant dish that lets soft potato gnocchi shine.

Serves 4

Pea & Brown Butter Sauce

Ingredients

  • 150g garden peas

  • 100g unsalted butter

  • 50g grated Parmesan

  • 1 shallot, finely diced

  • 1 garlic clove, finely chopped

  • Small handful fresh mint, chopped

  • Salt and black pepper

  • Juice of ½ lemon

Method

  1. Melt butter in a frying pan.

  2. Cook until it turns golden brown and smells nutty.

  3. Add shallot and garlic, cook gently for 1 minute.

  4. Stir in peas and cook for 2 minutes.

  5. Add cooked gnocchi and toss through the butter.

  6. Add lemon juice, mint and Parmesan.

  7. Season to taste.


To Serve

  • Spoon into warm bowls.

  • Finish with:

    • Extra Parmesan

    • Fresh peas

    • Mint leaves

    • Cracked black pepper

    • A drizzle of brown butter


Punk Chef Tip

For extra texture, fry the cooked gnocchi in a little brown butter for 1–2 minutes before adding the peas. The outside becomes crispy while the middle stays light and fluffy.
