FOR THE TASTY CHICKPEA CURRY
1 onion, finely chopped
2 garlic cloves, finely chopped
1 thumb size fresh ginger, grated
250g can of chopped tomato
1/2 tsp turmeric powder
1/2 tsp chilli powder
3/4 tsp chana masala powder
3/4 tsp garam masala powder
1/2 tsp salt
250g can of chickpeas
bunch fresh coriander chopped
splash of water
FOR THE HOMEMADE ROTI
250g chapati flour
10g vegetable oil
pinch salt
water
INSTRUCTIONS
FOR THE TASTY CHICKPEA CURRY: Add the onions, garlic, ginger in a medium pan and slowly caramelising them for 10 minutes till golden brown.
Add in chopped tomato, use a wooden spoon to mix together.
Add in all the spices and salt, keep stirring then some splash of water, simmer for 5 minutes.
Add in the chickpeas and leave to simmer for further 10 minutes.
Last minute throw in some fresh chopped coriander.
Keep this on low heat while making the roti.
FOR THE HOMEMADE ROTI: In a bowl, add in the chapati flour, salt, oil and enough water to form a dough.
Knead for 2-3 minutes.
Pull off some dough in the size of a golf ball and roll into a ball.
Press it down on the work surface then use rolling pin and roll it till its nice and thin.
Put the roti in a hot smoking pan and wait till the edges turn brown, turn over to brown the other side.
Once it brown and keep turning the roti quickly to allow the roti to puff up.
serve your homemade roti with your chickpea curry.
