Falafels are deep-fried ball or patty and is a traditional Middle Eastern food. those black turtle beans make an amazing alternative from chickpeas as they are crunchier and look like black pudding, even delicious with some black garlic.
FOR THE BLACK GARLIC FALAFELS:
300ml vegetable Oil, for frying
300g black turtle beans, soaked in water for 24 hours
60g fresh Coriander
40g fresh Parsley
3g baking Soda
3g chilli Flakes
3g ground Cumin
3g onion Granules
20g black Garlic
Soak the beans with water for 24 hours, then strain the beans and wash them nicely.
Place all the ingredients in the food grinder or food processor and pulse until you get semi ground, chunky mixture as it should be hard enough for you to easy shape them.
Shape it as you like, you can use a cookie cutter and full it up with the mixture then smooth the top and pull out the cutter to get a nice cylinder like shape, or you can use 2 spoons and do quenelles, make as many as you like on a tray then freeze them for 2 hours before cooking.
Remove from the freezer and direct pop them in the fryer at 170C for 3 minutes until nice golden in colour and crispy on the outside.
Place on a paper towel to drain the excess oil before serving.
